SUPERBOWL SUNDAY //
Loaded Mediterranean Fries
notes: i like to do a mix of sweet potato and regular fries (both from TJ’s frozen section). Included all of the good stuff for toppings, except for the fried pita strips. this is a favorite.
Slow Cooker Spinach Artichoke Dip
notes: except I forgot about the slow cooker part, and ended up just making this recipe and baking it instead… at 400 for around 20 minutes.
Antipasto Kebabs
notes: so there’s no real recipe here… this is just a picture. but you get the idea. and it’s a great appetizer that kids are happy to help assemble. I like to get the marinated fresh mozzarella balls from TJ’s and drizzle everything with a little balsamic/olive oil before serving.
MONDAY //
Rigatoni Broccoli Rabe Bake
notes: monday is starting to become italian/pasta/comfort food night. i just crave something cozy to start the week… and this recipe was perfect for just that. We ended up with a good bit of leftovers. Used sweet italian pork sausage instead of the spicy, omitted the sun-dried tomatoes, cut the milk to 3/4 cup, and topped with shredded mozzarella instead of the fresh/goat cheese. Will make this again!

Southwestern Fiesta Chicken
notes: I doubled up on the chicken, and this made enough for leftovers. Quick, easy and a break from the traditional Tuesday tacos. We’ll be adding this to the rotation…

WEDNESDAY //
Slow Cooker Beef Sweet Potato Stew
notes: made this on a day that was cold and wet and miserable, and it was the perfect meal. I doubled the beef broth, because 1 1/2 cups just didn’t seem like enough for all those vegetables, and it probably ended up being a bit too much liquid — more soupy than stew-y; but delicious regardless. Served it over Trader Joe’s riced cauliflower which I stir-fried in a little bit of olive oil/salt. Just another way to sneak some vegetables in there… but really would only work with a recipe like this, because in my opinion it definitely does not taste like rice!

Salsa Verde Enchiladas w/ Pineapple Avocado Salsa
notes: omitted the poblano and jalapeno pepper. Used flour tortillas. This was so fresh and flavorful. Definitely adding to regular rotation…
FRIDAY – SUNDAY // out of town
SUNDAY DINNER
Egg in a Hole Sandwiches
notes: so these are delicious. I used the Tuscan Pane bread from TJ’s. Found that the eggs needed to cook about 20-25 minutes to be firmed up. Also, had a problem with some of the whites spilling out from the bread, but it was fine once everything cooked up. Will make these again, for sure.
Hashbrowns — TJ’s patties in the frozen section are where it’s at.
