It was an all over the place kind of week with the kids out of school Monday and Friday, a couple family birthdays to celebrate and a case of the stomach flu over the weekend. Never a dull moment here! (image credit : halfbaked harvest)
Here’s what we ate…
MONDAY //
Slow Cooker Honey Sesame Chicken
notes: I doubled this to feed our crew and it was just the right amount. Tasty, easy, will definitely make again!

TUESDAY //
Tacos
notes: this taco meat recipe from Martha Stewart is one of my all-time favs. I like to add black beans as well to stretch the meat a bit farther. We just do flour tortillas warmed, rather than frying them crispy.
Chips + Salsa
Roasted Corn : spread a bag of frozen corn (I like TJ’s sweet corn) on a greased cookie sheet. Drizzle with olive oil and s+p. Bake at 425 for 20-25 minutes until corn starts to brown.
WEDNESDAY //
One-Pot Coq au Vin w/ Mashed Potatoes
notes: this is comfort food at its best. Seriously good. I made the recipe as is, omitting the mushrooms, and let it simmer for a while longer than she suggests, just because. Made the mashed potatoes, with whole milk instead of cream and found 2 tsp salt was too much. Next time I’d cut it back to 1 or 1 1/2 tsp. Did not make the brown butter because that just seemed over the top. Didn’t miss it!

Crock Pot Turkey White Bean Pumpkin Chili
notes: three cheers for crock pot meals! Made this with 1/2 the green chiles. This is also a great freezer meal!

We were supposed to go out, but were on puke patrol instead…
The healthy kids fed themselves fish sticks and mac n’ cheese.
SUNDAY //
My Birthday | on which I spent most of the day on the couch fighting the sick (and won). Eggs + Toast for dinner.
