MONDAY //
Mini Meatloaves w/ Potatoes + Brussel Sprouts from Southern Living
notes: made this recipe as-is, except for omitting the leeks (they were out at TJ’s this week). this came together pretty easily, and was a great flavor combo. and of course, having everything on one pan makes clean up the easiest.
Perfect Corn Muffins from Smitten Kitchen
notes: made these as prescribed, and i have to say they were pretty perfect.
TUESDAY //
Lasagna Stuffed Peppers from Peace, Love + Low Carb
notes: these are a favorites. just as good the second time making…
Chopped Kale Greek Salad from Gimme Some Oven
notes: there’s something about the flavors in greek food that are so fresh… and this salad was just that. a wonderfully flavorful fresh burst in the midst of winter. good stuff.

Date Night | Kids had Sheet Pan Lemon Parm Garlic Chicken w/ Veggies
notes: made this according to recipe and while i wasn’t there to eat it myself, it apparently got rave reviews from the kids with no leftovers. score.

notes: favorite bowl of comfort food.
Arugula Parmesan Salad from Simply Whisked
notes: has to be one of my all-time favorite simple salads.
SATURDAY //
Crockpot Lentil Detox Soup from Pinch of Yum
notes: no lentils to be found, so i used all split peas and that worked just fine. i used my immersion blender instead of removing the 4 cups of soup, leaving about half. topped with shaved parmesan. this was the perfect bowl of goodness for a rainy day. and 4/6 kids gave it two thumbs up.
5 Ingredient Beer Bread from HalfBaked Harvest
notes: I love those recipes you just throw into a bowl, mix and bake. This is the best beer bread recipe i’ve found.
SUNDAY //
Sheet pan Bratwurst Hoagies from Southern Living
notes: this is a pretty brilliant way to cook brats. Before the last step, we put the brats, peppers and onions on hoagie rolls and topped with havarti cheese. Broiled until the cheese was melted and added some honey mustard at the end. Such a good flavor combo.
