MONDAY //
P.F. Changs Lettuce Wraps
notes: this is a favorite of ours (kids included!)
+ I like to double the recipe and use ground turkey instead of chicken
+ omit the water chestnuts, but otherwise make as is
+ we use romaine lettuce to make the “wraps” because I feel like it’s easier for kids to eat with than iceberg.
Steamed Sugar Snap Peas
Egg Rolls (frozen from TJ’s)
TUESDAY //
Grilled Pork Tenderloin w/ Avocado Crema
notes: I was unable to find the achiote paste or adobo chiles at TJ’s, so I completely modified this recipe, subbed in a Raspberry Chipotle sauce with the other ingredients and called it a day.
+ definitely recommend marinating all day or as long as possible
+ the combination of the pork with the avocado crema is SO good
+ it being winter, I baked at 375 for 35-40 minutes instead of grilling
TJ’s Broccoli + Kale Slaw
+ we can’t get enough of this crunchy flavorful slaw mix. so fresh.
WEDNESDAY //
One Sheet Herb Crusted Salmon w/ Garlicky Gr. Beans + Roasted Tomato
notes: made this recipe pretty much as-is, with the addition of the some herb crusted chicken for the non-fish eaters. Love these simple recipes with the great flavor combinations. Also, loved that this was a one pan meal.

Balsamic Chicken w/ Roasted Vegetables
notes: used boneless, skinless breast pieces instead of thighs. otherwise made this as is, and it was a wonderfully easy winner of a dinner.
