MONDAY //

notes: I wanted to love this, but honestly, wasn’t that impressed. Kinda bland. Won’t make again. Oh well, they can’t all be winners!

notes: totally screwed up on accounting for all the rising time (oops!), but this worked out anyways (even with only half the time)
TUESDAY //
Sweet + Sour Chicken w Rice + Sesame Green Beans from Armelle Blog
notes: love this method of cooking the chicken just til golden then slow baking in the sweet sour sauce with veggies. one of the kids favorites. i was out of ketchup, but made the sauce as-is otherwise and it was fine. the greens bean recipe is so good too.
WEDNESDAY //
Lasagna Stuffed Peppers w/ Easy Meat Sauce from Peace, Love + LowCarb
notes: I’m going to be honest… I wasn’t sure I was going to like this, and I was HIGHLY doubtful I’d be able to get the kids to eat it. But they ALL did. every one! I couldn’t believe it. I think it has something to do with the yummy meat sauce and melty cheese. YUM. Made the recipe as is, other then using a scoop of creme freche instead of ricotta, beacause that’s all I had on hand. You could probably use cottage cheese, too… Will definitely make these again!

THURSDAY //
Thai Peanut Chicken Pumpkin Curry w/ Sticky Pomegrante Rice
notes: I found this recipe last winter and it’s become a favorite I go back to again and again. So creamy and cozy. All the flavors together are just winning. And definitely make the sticky rice. You won’t regret it!

notes: your kids might actually like broccoli after eating this. for reals.
FRIDAY //
Homemade Pizza for Kids
Beet Citrus Salad topped w/ Grilled Chicken for Adults
notes: used the leftover pomegrante arils from the night before and tossed together this salad, adding some grilled chicken for protein. It was delish!

Spinach Artichoke + Feta Bake
notes: made this recipe as-is, except for omitting the red pepper. It was delicious and pretty “light” tasting, which was a nice break after a weekend of not healthy eating 😉
