Oh hey there… emerging from the fog of busy season and hoping to get back to blogging. Better late than never… here’s the menu from 2 weeks ago. Lots of winners. Enjoy!
MONDAY //
Parmesan Polenta w/ Pork Raghu
notes: this is a favorite of ours that I found last winter. I make this as-is, and squeeze the pork sausage out to make little meatballs, as she suggests. Comfort food at its best.
Spinach + Kale Greek Salad
notes: opted out of the greek seasoning for a pinch of basil + oregano. Other than that, made this as is.
TUESDAY //
Skillet Cranberry Roasted Chicken + Potatoes
notes: used boneless, skinless breasts instead of the skin-on just because that’s what I happened to have. otherwise, again, made as-is, and this was a good one. Super flavorful and pretty to look at too.

WEDNESDAY //
Bourbon Pork Tenderloin
notes: Trader Joe’s was sadly out of pork tenderloin this week, so I had to opt for boneless pork chops instead. Baked, instead of grilled. This was a great marinade I’ll be using again.
Crispy Roasted Sweet Potatoes w/ Bourbon Maple Butter
notes: this recipe may just be my new favorite way to eat sweet potatoes.
I forgot the toasted pecans, and neglected to stick these back in the oven after drizzling the maple bourbon sauce. Was amazing either way.

THURSDAY //
Cuban Chicken + Black Bean Quinoa Bowls
notes: full disclosure — I worked late this night and James made dinner for the kids (baked chicken and rice) — so we didn’t actually eat this; but you should still try it. It’s one of our all-time favs.
A few notes —
+ I omit the red chile from the marinade, as well as from the mango. We just don’t do spicy very well around here, in case you haven’t figured that out by now.
+ The combination of all of these flavors together is just so good. The sweetness of the banana and the mango with the flavors in the chicken, quinoa and beans. Yum.

Made the skillet cranberry chicken, but substituted pork (because that’s what i had ), and threw in some mushrooms because I didn’t have potatoes. It was yummy! Love your recipes! Please keep Sharing!
