Heeey, I’m back! We took a quick trip out of town last weekend, combined with halloween falling on Monday and being in the midst of the craziest season of work all year…I started my week feeling behind and never caught up… but I’m back. And we’re still eating. Here’s the menu for last week…
MONDAY //
Big pot of chili.
Beer Bread. Easy enough to whip up from scratch on your own, but the box mix from Trader Joe’s is kinda the BEST.
TUESDAY //
Roast Veggies + Chicken from Daisy & the Fox
notes: doubled the recipe. Used butternut squash instead of pumpkin.
Capsicum is red pepper — good to know.
Used 6 boneless, skinless chicken breasts.
1/4 c. almonds
1/4 c. sunflower seeds
Served over arugula with feta (this is crucial).
This seed topping is so yummy. Enjoy!

Date Night //
Kids had meatball stroganoff over rice + peas (frozen meatballs from TJ’s)
THURSDAY //
Spinach Artichoke Stuffed Chicken from Little Bits Of
notes: Used frozen spinach like she recommends and TJ’s marinated artichoke hearts. This was a “good for you” recipe and not gonna lie, missed some breadcrumbs and melted butter for some coating.
Perfect Mashed Sweet Potatoes
notes: made this as is, just sprinkled some brown sugar in at the end.
Steamed Broccoli. I get the bag from TJ’s and steam it in the bag in the microwave.
FRIDAY //
Crockpot BBQ Beer Pulled Chicken with Cheddar Corn Popovers
notes: made the chicken in the crockpot.
Used chili powder instead of the chipotle powder.
We have been loving the Apple Bourbon BBQ Sauce from TJ’s.
Just used a cheap pilsner beer from Trader Joe’s.
Loved the popover recipe… I just used a muffin tin, and have a feeling they would have been even better if I had a popover pan to make them in
TJ’s Broccoli and Kale Slaw mix. This came with everything you need : dried cranberries, blueberries, seeds and slaw dressing and was SO GOOD.
SATURDAY //
Meatball & Spinach Ravioli Bake from Drizzle + Dip
notes: I went with an Arugula Parmesan Ravioli from TJ’s (2 packs)
Made the sauce as is, except for omitting the stock cube + worcestershire.
Also, I bought the plum tomatoes with basil leaves included.
Used 1 lb. ground beef, 1/4 c. breadcrumbs and dried parsley.
Baked the meatballs at 375 for 12 minutes instead of frying them.
This was hearty, cozy and definitely something we’ll be making again…
Dr. Weil’s Kale Salad from Martha Stewart
notes: I just use the regular kale from TJ’s, and try to get out the big stems. We chop, toss with dressing ingredients, and massage until a dark green.
SUNDAY //
Slow Cooker White Bean Chicken Soup from 12 Tomatoes
notes: made this recipe as is. Super flavorful and one of those amazing recipes you throw in the crockpot in less than 5 minutes and come home to a full meal ready to go.
