Here’s Week 7…
MONDAY //
Italian Pumpkin + Kale Chicken Noodle Soup with Fontina Toast
notes: the only fresh herb I had was rosemary, so I used that.
+ Also, I misread the recipe and only bought one quart of chicken broth. I added 2 cups of water to the broth I had and it was fine.
+ omitted the rind of parmesan
+ got this cute pasta from TJ’s shaped like pumpkins
+ this was a yummy recipe. James and I had the soup without the pasta (I like that you add the soup to the pasta at the end) and it was still just as delicious. A good cozy fall meal.
TUESDAY //
Herb + Citrus Oven Roasted Chicken
notes: this is a flavorful dish. I like to make the recipe as is, but with boneless skinless chicken breasts instead of the thighs. Reduce the baking time a bit, if you do the same.
Honey Maple Roasted Carrots
notes: omitted the coriander, sesame seeds and thyme.
+ Trader Joe’s sells pomegrante arils in the produce section so I used those.
+ this was a yummy, easy side dish. will make again!
Homemade Applesauce
notes: peel, slice and core apples (i used 6-8).
add to a stock pot with enough water to cover the bottom.
sprinkle with cinnamon and little sugar, if desired.
simmer 2-3 hours until apples fall apart. can be served warm or cold.
WEDNESDAY //
Asian Beef + Broccoli over Rice
notes: this was a good slow cooker recipe. I didn’t do the additional instructions for the sauce.
+ served it over white rice and sprinkled the cashews on top
THURSDAY //
Skillet Chicken with Bacon, Brussels and Apple Jus
notes: I used 6 small boneless, skinless chicken breasts in place of thighs.
Kept all the other ingredients the same.
This dish make the house smell amazing and tastes pretty good too. A fav of ours.
