Monday again… better late than never, here’s last week’s menu!
MONDAY //
Mediterranean Chicken & Rice Bowls from gimmedelicious
notes: this is a great one recipe meal.
+ I make less rice (1 1/2 c. to 3 c. water)
+ I buy pre-made hummus instead of making my own
+ Chicken marinade is excellent and even better if you let it soak all day.
TUESDAY //
Brown Sugar Meatloaf
notes: I like to use 2 lbs of ground beef and make the rest as-is. Have never tried the fresh rosemary… this is one of the kids favorite meals.

WEDNESDAY //
Skillet Salsa Verde Chicken Bake from HalfBaked Harvest
notes: I used a jar of salsa verde from Trader Joe’s instead of making my own.
+ Next time, I’d use less broth. Maybe just 1 1/2 cups… there was a lot of liquid left even after all the cooking.
+ Went halves on the cheese for the topping and it was plenty.
+ Even with the soupy-ness of the remains, this was a great medley of flavors. Will be making again with some tweaks…
Baked Parmesan Zucchini from damndelicious
notes: I’m always looking for new ways to eat our veggies and this was a good one. Next time, I’d spread my zucchini strips out more, so they have a chance to crisp up better.
THURSDAY //
PF Changs Copy-Cat Lettuce Wraps from Iowa Girl Eats
notes: I use ground turkey and omit the water chestnuts. Other than that, we have this as is.
This is one of our favorites and sees pretty regular rotation on the menu.

FRIDAY //
Homemade Pizza for kids/Date Night
When I plan ahead, I like to make this bread machine pizza dough.
Super quick, easy and makes a good fluffy crust.
BREAD MACHINE PIZZA DOUGH
adapted from hillybilly housewife
Add following ingredients to bread machine pan in order listed :
1 1/4 c. lukewarm water
3 Tbsp. olive oil
1 tsp salt
4 c. flour
1 Tbsp. yeast
Run on dough cycle in bread machine.
Spread on prepared pans and bake at 425 for 12-15 minutes, or until golden.

Garlic Butter Pasta with Herbed Pork Bolognese from halfbaked harvest
notes: I omitted the heavy cream from the bolognese.
Also, I used whole wheat spaghetti and added lemon zest to the kale salad.
The combination of all the flavors… so so good. Will definitely make again!
