notes: I use 2 cans of great northern beans instead of the soaked beans

TUESDAY //
Honey Balsamic + Lemon Brussel Sprout Chicken w/ Polenta from halfbakedharvest
notes: I make this polenta with feta instead of goat cheese
+ Otherwise, we have this recipe completely as is. Such an awesome flavor combination.
5 Ingredient Beer Bread from halfbakedharvest
notes: Super easy, super good.
WEDNESDAY //
Crispy Coconut Chicken, Brie + Avocado Tostadas
notes: I wanted to love these, but honestly I felt like it was missing something. Maybe some pico de gallo? It needed a new texture. I would make again just for the chicken, though. Great breading.
Roasted Parmesan Zucchini, Squash + Tomatoes from cookingclassy
notes: first time making this recipe and it was delicious. Made as is.
THURSDAY //
Shepherds Pie from williams-sonoma
notes: discovered this recipe last winter and it’s become a favorite comfort food.
+ I use stew beef instead of lamb
+ Next time, I’d use a probably 2 cups of beef broth instead of the 3 1/3. There is alot of liquid here. It worked out fine, and honestly the gravy broth is amazing, but it’s more of a soup than a pie.
Arugula Salad w/ Pear, Glazed Almonds, Gorgonzola and Creamy Balsamic Dressing
notes: this dressing is quick and easy to throw together. It’s one of our favorites.
FRIDAY //
Pizza for Kids / Winter Chicken Kale Salad for Adults from I will not eat oysters
notes: we had this salad with quinoa instead of the rice/barley
+ I love serving with sliced stilton w/ apricot cheese instead of the blue
+ no garnish and chopped the kale fine
+ Such a great winter salad.
