MONDAY //
Honey Coconut Cashew Chicken Stir-Fry with Rice from Carlsbad Cravings
notes: omitted the siracha and the green onions. this was super fresh and flavorful. will make again.

TUESDAY //
Tacos with Homemade Tortillas from the nato’s
notes: in case you haven’t noticed, we have a variation of tacos every tuesday. our go-to is ground beef with TJ’s taco seasoning and black beans, topped with shredded lettuce, cheese, pico de gallo, guacamole, and sour cream.
Martha Stewart’s Spanish Rice
notes: this is a favorite side of ours. i make as directed, but grate the carrot instead of dicing.

WEDNESDAY //
Tequila Lime Chicken Sandwiches
notes: omitted the jalapeno in the marinade. other than that, made it as is. this marinade is so so good. i forgot to buy guacamole, so we had it with just the cheese, bacon, lettuce and chipotle mayo. make these, guys, you won’t regret it.

Fresh Corn & Zucchini Pie from pinch of yum
notes: most of my kids will eat this up, and they don’t even like zucchini. it’s basically a healthy crustless quiche. i omitted the mushrooms and used frozen corn. i really like TJ’s shredded gruyere blend for this.
Roasted Beet, Pear and Walnut Salad from camillestyles
notes: i peeled, diced and roasted the beets for this. served it over arugula (didn’t add the quinoa). it was good, but nothing amazing. don’t know that i’ll make it again…
FRIDAY //
Sawyer’s Bday // Grilled Hot Dogs & TJ’s Apple Sausage
Mom’s Homemade Mac n Cheese
notes: used all shredded cheddar instead of the velveeta. this is a favorite.
Kale & Brussel Sprout Salad from sugar & grace
notes: I make this salad pretty much as is, and it’s one of our favorites. i use the pre-cooked hickory bacon from TJ’s and love it with the honey roasted sliced almonds from there as well.
SATURDAY //

SUNDAY //
LUNCH
Slow Cooker Chili
notes: no recipe for this really… just brown ground beef and onions, and season with 1 Tbsp chili powder, 2 tsp cumin, 1 tsp pepper and 1 tsp garlic salt. Add to crockpot with 28 oz can diced tomatoes, can of tomato paste, 2 cans kidney beans and a can of corn. I like to add a 1/2 can of beer too. Cooked on low for 4-6 hours and it was ready when we got home from church. Served with shredded cheese, sour cream and tortilla chips.
DINNER
Loaded Mediterranean Street Cart Fries from pinch of yum
notes: this was the perfect Sunday night, watching the football game, everybody gathered around eating dinner… I did a combo of TJ’s sweet potato and regular fries. Heaped them on 2 big plates and topped with TJ’s tzatziki, the marinated tomato and chickpeas, romaine, feta, olives and sliced peppered salami. all of the flavors. oh my goodness. will definitely make this again.
