It has been gray gloomy skies and/or raining for what seems like ages, and that always puts me in the mood to make the house more cozy inside. which usually entails baking something yummy. made these blondie bars last week and they were SO good!
Chocolate Chip Banana Bread Blondies
yield : 16 blondies
cook time : 35 minutes
total time : 50 minutes

Ingredients
1 1/4 c. white w/w flour
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. coconut oil, melted
3/4 c. light brown sugar
1 large egg
1/2 c. mashed banana (1-2 bananas)
3/4 tsp. vanilla extract
1 c. semisweet chocolate chips
1/2 c. coarsely chopped pecans (optional)
Instructions
Preheat oven to 350 degrees.
Grease an 8×8 square baking pan.
In a bowl, whisk together flour, salt and baking soda until evenly distributed and set aside.
In a large mixing bowl, combine melted coconut oil and sugar and mix until smooth and paste-like.
Mix in egg, followed by mashed banana and vanilla, mixing until smooth.
Add dry ingredients and mix until just incorporated.
Stir in chocolate chips and pecans.
Pour into prepared baking pan.
Bake for 30-35 minutes, until center is set and edges light golden brown.
Let cool completely before lifting out and cutting into squares.
