Nothing like a good snow day to get me in the baking mood. Yesterday, I made a big pan of granola, and we’ll be enjoying it all weekend long. This recipe is adapted from the 100 Days of Real Food blog. It’s super easy to throw together, and the ingredients are ones I usually have on hand anyways. Bonus : it makes the house smell amazing while it’s baking. Enjoy!
Homemade Granola
PREP TIME : 10 minutes
COOK TIME : 75 minutes
Ingredients
3 1/2 cups rolled oats (GF)
1 c. raw sliced almonds
1 c. cashew pieces (I like to use the not-so-salty from TJ’s)
1 c. unsweetened coconut flakes
1 c. raw sunflower seeds
2 tsp. cinnamon
1 1/2 tsp. ground ginger
(can add dried fruit, if desired : cranberries, apricots, etc)
6 Tbsp. butter
1/2 c. honey
2 tsp. vanilla
1/2 tsp. salt
Instructions
Preheat oven to 225.
In a large bowl, combine oats, nuts, seeds and spices.
Heat butter and honey together in a small saucepan over low heat.
Once the butter melts, stir in vanilla and salt.
Pour the hot liquids over the dry ingredients and stir with a rubber spatula to combine.
Spread mixture on greased (or lined) cookie sheet and spread evenly.
Bake for 75 minutes.
Granola will crisp as it cools, at which point you can break it up into small chunks. We like to enjoy sprinkled over yogurt, or with milk.
