Another week in the books, with a snow day thrown in for good measure.
And bad news (good news?). As of this past Saturday, we started doing Whole30.
My challenge : to cook whole30 meals and modify them to be kid friendly/acceptable and dare I say, delicious? You are welcome to join along. Or, totally understandable if you want to just work your way through the archives of past menus until we are back to regular eating again. Wish us luck!

notes: super simple, super basic chicken noodle soup. i made with whole wheat rotini noodles. the perfect bowl of comfort food.

Date Night | Kids had Meatball Stroganoff over Egg Noodles, Peas
One Skillet Mediterranean Chicken
notes: I roasted some boneless skinless chicken breasts w/ olive oil, salt and pepper and sliced into medallions to add to this dish. also omitted the mushrooms. the flavors were delicious. you would never know it was paleo/whole30. Top with feta for the full mediterranean experience 😉
Lightened Patatas Bravas
notes: I am a big fan of patatas bravas and these did not disappoint. the combination of these two recipes together was delicous. definitely will make again.
Pizza for Kids | Asian Cobb Salad for Adults
notes: simple, fresh flavors. this was an easy one to throw together. added in extra chicken i roasted from the night before.
Dairy Free Frittata w/ Heirloom Tomatoes
notes: day one of the whole30 thing and it wasn’t so bad. i added in some chopped canadian bacon (TJ’s)
On the Side : sauteed kale, grapefruit, blueberry muffins for kids
Bacon Burger + Fries Skillet
notes: this is a recipe I’d make even if I wasn’t doing whole30. lots of good flavors going on here and very hearty and satisfying.
